Cheese-Stuffed French Toast With Strawberry Sauce Recipe
Ingredients:
1 Tbsp water
1/4 c sugar
1 lemon (large)
Candied lemon-rind
1/3 honey
3 Tbsps fresh juice of lemon
4 c strawberry slices
Strawberry-sauce
Veggie cooking-spray
2 large eggs
4 eggwhites
1/2 tsp extract (vanilla)
1/3 c sugar
2 & 1/2 c milk (1%PRCTG%)
A tub of low fat creamcheese
1/4 c of sifted powder sugar
12 french-bread slices; cut diagonally
Instructions:
Cut slit in horizontal fashion through crust’s bottom of every bread slice forming pocket. You combine creamcheese & powder sugar, stirring well.
You spread this mixture into bread pockets evenly. Place about 6 slices of bread into 2 shallow, large bake dish then set this aside.
You combine eggs, eggwhites, extract, sugar & milk in bowl. Beating well w/ whisk. You pour milk-mixture into bread then cover & chill about 60 mins ’til liquid gets absorbed.
Have one large stick-free skillet sprayed w/ veggie spray then set over mid-heat ’til hot. You arrange one-half sliced bread into skillet then cook about 3 mins.
You turn over your bread then cook for additional 3 mins ’til browned then remove them from the skillet. Do the same w/ rest of bread. Serve w/ strawberry-sauce then garnish w/ candied lemon-rind.
Strawberry-sauce. You combine 4 c slices berries, honey & juice of lemon then cover & set it aside about 60 mins.
For candied-lemon rind: Carefully remove lemon-rind then cut them into 1/8″ thick strips then set them aside.
You combine water & 2 Tbsps sugar in 2-cup measure. set in microwave about 60 mins then add in lemon-rind. Set again on microwave for 2 more mins then stir every thirty seconds.
You add 2 Tbsps sugar then toss ingredients well to combine. You spread the rind onto waxpaper then stand it at room-temp ’til dry. Keep in tightly-covered container.

Asparagus With Strawberry Vinaigrette Recipe
Ingredients:
1 & 1/2 tsps honey
1/2 c peanut-oil
1 Tbsp walnut-oil
1/4 c strawberry based vinegar
2 c of strawberries; hulled
2 & 1/2 lbs asparagus
Instructions:
Have asparagus trimmed then cut every stalk into thirds. You steam them ’til crisp & tender. You plunge them into cold water then drain well.
You wash the strawberries & then have them hulled. You cut them into half then add into asparagus.
You combine oils & honey then toss strawberries & asparagus gently w/ dressing. Have it chilled prior to serving.

Baked Ham With Strawberry Sauce Recipe
Ingredients:
A dash of nutmeg
1/2 tsp ginger
2 cloves (whole)
2 cinnamon sticks
10 ounces of undrained strawberries (frozen)
1/3 c sugar (white)
4 Tbsps sugar (brown)
1 Tbsp dried mustard
1 ham slice (thick)
Instructions:
Gash fat of ham in different areas then cook in skillet ’til evenly browned. You place the slice of ham into bake dish. You combine vinegar, brown-sugar & mustard then sprinkle this mixture over ham.
Simmer the strawberries in medium saucepan together w/ spices for about 10-15 mins. You pour this mixture all over your ham. Bake for about 1 & 1/2 hrs at 320 degrees F.

Apple-Strawberry Whip Recipe
Ingredients:
2 tsps tahini
2 pints hulled strawberries
1 tsp extract (vanilla)
4 c apple-juice
6 Tbsps flaked agar
Instructions:
Have agar placed in saucepan w/ juice. Heat ’til boiling then cook, frequently stirring over mid-heat about 10-15 mins. You add the vanilla then continue cooking about 60 secs.
Have all strawberries halved then set aside 6 whole ones. You place halved strawberries onto shallow-pan then you pour the warmed mixture all over.
You place your pan into freezer ’til set for half an hour.
You cut juice & strawberries into 2-inch squares. Then place two squares & tahini into blender then process ’til smoothened. You remove the mixture then transfer into bowl. You blend rest of squares ’til smoothened.
You whisk mixture well then scoop in serving-bowls. Have rest of strawberries slices then evenly divide amongst the bowls.
Have them refrigerated ’til set for 60 mins.

Luscious Strawberry Frosting Recipe
Ingredients:
1/2 c cut-up strawberries
1 tsp vanilla
1/8 tsp salt
1/4 c confectioner’s sugar
2 c thick cream
Instructions:
Whip sugar, salt & cream together, Fold berries & vanilla in. You frost cake then refrigerate ’til ready to serve.

Angel Hair Pasta/ Strawberry/ Brown Sugar Sauce Recipe
Ingredients:
2 Tbsps of chopped hazelnuts (toasted)
4 ounces of angel-hair pasta
3/4 cup of thick cream
1/3 cup of dark-brown sugar
1 cup of thinly-sliced strawberries
Instructions:
Toss 1 Tbsp sugar & strawberries together in bowl. Cover then set it aside. You combine rest of sugar & cream in saucepan. Heat ’til boiling, stirring often.
You reduce the heat then simmer ’til sugar dissolves & cream turns light-brown & smooth. You remove pan from the heat.
Have pasta cooked ’til al-dente. Place in saucepan then heat & add previous mixture, tossing thoroughly ’til coated & heated through.
Transfer into bowl then spoon juices & strawberries over. Generously sprinkle w/ nuts then serve.

Chilled Strawberry Soup Recipe
Ingredients:
1 lime; thinly sliced
Strawberries; sliced
A dash cinnamon
1 c buttermilk
1/2 c sugar
1 tsp grated rind of lemon
A dash all-spice
1 Tbsp juice of lemon
1 c juice of orange
1 & 1/2 tsps tapioca (instant)
2 pints strawberries (fresh)
Instructions:
Place berries in processor then process ’til pureed. Combine strawberry puree, all-spice, cinnamon, juices & tapioca in medium-sized saucepan. Heat ’til boiling, constantly stirring w/ whisk.
You reduce the heat then simmer w/o cover over mid-heat ’til thickened. Frequently stir then remove it from the heat. You add in sugar, stirring ’til dissolved.
Have mixture refrigerated ’til chilled well. Add buttermilk & rind. Blend well w/ whisk.
Best when served w/ lemon & strawberry slices.

Caramel Mountain Ranch Cold Strawberry Soup Recipe
Ingredients:
4 ounces of creme-de-cassis liqueur
2 c milk
2 c heavy cream
2 pints fresh strawberries
1/2 c sugar
Instructions:
Cut off strawberries’ stem then rinse them well under running water. Reserve 6-8 berries to be used as garnish.
Have berries pureed in processor together w/ liqueur & sugar then leave overnight.
You whip cream ’til thick then fold berry-mixture, milk & cream together. Slice rest of berries slightly halfway.
Spoon soup onto chilled soup-cups then hang berries along side.

Cajun Catfish With Spicy Strawberry Sauce Recipe
Ingredients:
Parsley sprig
Strawberries (fresh)
1/2 c safflour-oil
3/4 c flour
3/4 c cornmeal
2 tsps horseradish
1 garlic clove; minced
1/4 c seafood cocktail-sauce
1 Tbsp soysauce
1/2 red-wine vinegar
Instructions:
Have fillets placed in shallow large dish then season w/ hot-pepper sauce, blackpepper & salt. Cover then refrigerate for 60 mins.
Combine horseradish, garlic, cocktail-sauce, soysauce, & vinegar. You simmer this sauce slowly over low-heat. Occasionally stir.
Blend flour & cornmeal in bowl. Have catfish drained then dredge them in meal mixture, coat evenly. Have oil heated in thick skillet set over mid-high heat. Once hot, you add the catfish then saute ’til evenly browned.
Drain them on paper-towels. You spoon about 1/4 c sauce of every plate then top w/ fillets. Top w/parsley & strawberry slices as desired.

Bluenose Strawberry Soup Recipe
Ingredients:
1/4 c sugar
1 c half-and-half
1/2 tsp extract (vanilla)
1 c sourcream
2 Tbsps brandy
2 c of strawberry slices plus extra
Mint leaves
Instructions:
Blend vanilla, brandy, sugar, half-and-half, sourcream & strawberries for 30-45 secs.
Best when served in previously chilled cups then garnished w/ strawberry slices & mint leaves.

Pink Strawberry Soup Recipe
Ingredients:
Fresh sprigs of mint
A pinch of salt
1/4 c whipped cream
1/4 c sourcream
4 c pureed strawberries
1 cinnamon stick
2 Tbsps juice of lemon
1/3 c sugar (granulated)
1 c of port-wine
2 c water
Instructions:
Combine cinnamon, juice, sugar, port & water in small saucepan. Heat ’til boiling then remove cover over id-high heat about 10 mins, stir often.
Add pureed berries then reduce the heat & simmer about 5 mins. You discard the cinnamon then cool mixture at room-temp.
Whisk sourcream in. Beat salt & cream together ’til stiff then fold this into the soup. Chill w/ cover overnight.
Best when served w/ wine-glasses then garnish w/ mint.
