Marbled Strawberry Mousse Recipe
Ingredients:
2 c heavy cream
4 eggwhites
1 tsp extract (vanilla)
2 Tbsps juice of lemon
3/4 c water
1/8 tsp salt
3 pints hulled strawberries
3/4 c sugar
3 envelopes of gelatin (unflavored)
Instructions:
Prepare the collar to be used for 1&1/2-qts souffle-dish. You tear 20-inch waxpaper strips then fold them lengthwise, creating 20×6-inch strips. You wrap these strips around dish, standing two inches over rim.
Puree berries in blender then pour a cup of puree into small-sized bowl then the rest into another bowl.
Mix sugar, salt & gelatin in saucepan then add some water. Have it cooked over low-heat ’til gelatin dissolves, stir often. Add 2 Tbsps gelatin-mixture into smaller bowl w/ puree.
Add rest of gelatin-mixture, vanilla, & juice of lemon. Have mixture refrigerated but stir it occasionally for 45 mins.
Beat eggwhites in bowl w/ mixer ’til stiff-peaks form. Beat the cream in another bowl at mid-speed ’til stiff-peaks form. Fold eggwhites into cream then into strawberry-mixture gently.
Spoon strawberry-mixtures alternately from different bowls onto souffle-dish. You cut mixture through w/ knife, creating marble-design. Refrigerate w/ cover ’til mousse sets.
